As for selecting just the text - in case you don't know - double click the magic pen and set tolerance to 0. In this case, try setting the background to a more suitable colour first (use the eyedropper on the original picture perhaps?). If you paste onto a dark background, the text will have a pale outline because it was written on a white background.
